Mushroom Meatballs
One of my favourites.
Ingredients
- 1 tbsp oil
- 500g white mushrooms
- Pinch salt
- 1 tbsp butter
- 1/2 cup onion
- 4 garlic cloves
- 1/2 cup oats
- 30g parmesan
- 1/2 cup breadcrumbs
- 1/4 cup flat-leaf parsley
- 2 eggs
- 1 tsp salt
- 1 pinch cayenne pepper
- 1 pinch dried oregano
Method
Chop mushrooms and finely chop onion. Heat oil over medium-high heat. Add mushrooms and salt, and cook until liquid evaporated. Stir in butter. Reduce heat to mdium and cook until golden brown (5 minutes).
Stir in onion and cook until translucent (5 minutes). Remove from heat and stir in garlic. Transfer to bowl.
Mix in oats and parmesan. Add breadcrumbs, parsley and 1 egg, salt, pepper, cayenne and oregano. Mix with fork until crumbly. Add another egg. Refrigerate overnight.
Form meatballs on a tray. Bake for 12-15 minutes at 230C.
