Lemon Curd
A good way to use up excess egg yolks. And butter.
Ingredients
- 3 lemons
- 3/4 cup sugar
- 110g butter
- 5 egg yolks
- 1/4 tsp salt
Method
Zest 3 lemons and gather 1/2 cup lemon juice. Combine sugar, lemon zest, egg yolks, lemon juice and salt.
heat over very low heat, whisking constantly. At approximately 150F, add butter. Heat to 170F and the curd has thickened.
Strain and store.
