Beef and Black Bean Sauce

Beef and Black Bean Sauce

Ingredients

  • 500g sirloin or rump steak, cut into thin strips
  • 1 clove garlic, crushed
  • 1 small red chili, deseeded and finely chopped
  • 1 tbsp soy fauce
  • Freshly ground black pepper
  • 2 tsp cornflour
  • 1 tbsp water
  • 1 tbsp white wine vinegar
  • 2 tbsp vegetable oil
  • 1 yellow capsicum, cut into strips
  • 1 red capsicum, cut into strips
  • 1 large zucchini, cut into matchsticks
  • 150g snow peas, sliced
  • 3 tbsp black bean stir-fry sauce
  • 4 spring onions, sliced

Method

Combine the steak strips, garlic, chili (if using), soy sauce, and seasoning in a bowl. In another bowl, mix the cornflour with the water until smooth, then stir in the vinegar.

Heat the oil in a wok or large frying pan until very hot. Add the meat and its marinade and stir-fry for 4 minutes, tossing continuously, until it is seared on all sides.

Add the capsicum and stir-fry for 2 minutes. Stir in the zucchini and snow peas and cook for 3 minutes. Reduce the heat and add the cornflour mixture and black bean sauce. Stir to mix thoroughly, then cook for 2 minutes or until the meat and vegetables are cooked through. Scatter with the spring onions just before serving.
